Snow Day Recipe | Slimming World Chicken Homity Pie

With all the snow outside I wanted a comforting, tasty dinner that would warm me up but still be on plan. One of my favourites is a take on the Slimming World classic Homity Pie but as I much prefer a Chicken Homity Pie. Chicken, leeks, mashed potatoes and cheese - what more could you want? This syn free dish has been one of my favourites since 2017 so I thought I'd share my snow day recipe.



Ingredients
Fry Light Spray
400g potatoes, peeled and cubed
2 onions
A leek
2 chicken breasts
2 garlic cloves (I use Lazy Garlic)
85ml vegetable stock
2 eggs, lightly beaten
120g reduced fat cheddar cheese


Start off by pre-heating your oven to 220°C, 200°F or Gas 7. Spray an ovenproof dish with Frylight and begin prepping the food. Peel and chop the potatoes and boil them for 15 to 20 minutes. 

Chop the onions, leeks and chicken. Fry them in a frying pan that's been sprayed with a low calorie spray like Frylight. It should take around 10 minutes for the chicken to be cooked through and the vegetables to soften.


Once the potatoes are tender, drain and mash them. Add the eggs, vegetable stock, garlic and half of the grated cheese to the mashed potatoes and stir. Add the vegetables and chicken to the mixture and stir well to combine. Spoon the mixture into the prepared ovenproof dish and sprinkle the rest of the grated cheese on the top.

Bake in the oven for 20 minutes or until golden brown. Serve on its own or with a side of vegetables for extra speed. Perfect for all of the family and even better when there's enough for lunch the next day!
